4 servings (1/4 mixture)
Ingredients:
2 cups water
1 cup unsweetened almond milk
1 cup uncooked steel cut oats
1/2 tsp table salt
1/2 tsp ground cinnamon
1/2 cup reduced sugar craisins
1 medium apple, chopped
Directions:
Add all the ingredients into a large pressure cooker safe bowl. Stir to mix. Set aside.
Add 2 cups of water to the instant pot. Place the prepared bowl on a trivet in the pot.
Seal the pot and cook on high pressure for 15 minutes.
Let the pressure release naturally for 15 minutes.
Stir and leave for a couple of minutes to thicken.
This can also be cooked on a stove top. You may need to increase the water (1/2 cup). Bring the water and milk to a boil, add the rest of your ingredients, stir and reduce heat to a simmer. Let cook for 20-30 minutes, stirring occasionally, until the oats are tender.
Leftovers can be stored in the refrigerator and heated up in the microwave.
