Ingredients:
6 oz banana, ripe and mashed
1 large egg
1/4 cup unsweetened almond milk
1 tsp vanilla extract
2 oz uncooked rolled oats
1 oz chia/buckwheat/hemp seeds
1 tsp apple pie spice
1 tsp baking powder
1 pinch table salt
6 oz fresh apple, diced
Directions:
Preheat oven to 350F. Prepare 2 large ramekins by lightly spraying them with oil. Set aside.
To a medium bowl, add the mashed banana, egg, almond milk and vanilla. Whisk together well.
Fold in the oats, chia seed mix, apple pie spice, baking powder, salt and diced apples.
Pour the oatmeal mixture evenly between the ramekins and pop in the oven.
Bake for 30 minutes or until they are set and golden brown.
