Ingredients:
144g quick oats
5 tsp date powder
2 tsp ground cinnamon, divided
1/4 tsp table salt
1 egg
1/3 cup unsweetened applesauce
2 large apples, peeled, cored and chopped
1 tsp corn starch
1 tbsp water
Directions:
Preheat the oven to 350F. Prepare a 9" pie plate by lightly spraying with oil. Set aside.
In a medium bowl combine the oats, 3 tsp date powder, 1 tsp ground cinnamon, salt, egg and applesauce. Mix well.
Add the dough to your prepared pie plate, pressing into the bottom and about 1-2" up the side (wet your fingers to prevent sticking to them). Bake for 15 minutes.
Meanwhile, In a small bowl, combine the cornstarch, the remaining 2 tsp date powder, the remaining 1 tsp ground cinnamon and water. Mix well and set aside.
Add the apples to a medium microwave safe bowl. Add the cornstarch mixture. Mix well. Microwave for at least 4 minutes and stir. Set aside.
After the 15 minutes baking time is up, remove the crust from the oven and add the apples.
Put back into the oven for another 15 minutes or until cooked through and golden brown.
