Applesauce Pancakes (2 points)

3 servings (2 pancakes each)


Ingredients:

1/2 cup unsweetened applesauce

6 tbsp unsweetened almond milk

1 egg

1/2 tsp vanilla extract

1 cup uncooked old fashioned oats

1 tsp baking powder

1/2 tsp ground cinnamon

1/8 tsp ground allspice

1/8 tsp ground nutmeg

1/8 tsp table salt


Directions:

Add all the ingredients into a blender and blend on high until the oats are broken down.

Heat a lightly sprayed large skillet on medium high heat.

Drop a couple of heaping tbsp of batter into the hot skillet.

Cook until the edges look cooked, then flip carefully and cook until pancakes are cooked through.


Suggested Serving: Serve with fruit and maple syrup.
