Ingredients:
1/4 cup soy sauce
1 tsp minced garlic
1 tsp minced ginger
1 tbsp rice vinegar
1 tsp sesame oil
8 oz snow peas
1 tbsp olive oil, divided
8 oz mushrooms, quartered
8 oz uncooked lean sirloin, sliced thin
Directions:
Combine the soy sauce, garlic, ginger, vinegar and sesame oil. Set aside.
Cook the snow peas by placing them in a pan and covering with boiling water. Let sit for 5 minutes. Drain and set aside.
Heat up a large skillet on medium high. Add 1/2 tbsp olive oil. Add the mushrooms and cook until browned. Remove the mushrooms to a bowl. Set aside.
To the same skillet, on high heat, add the last 1/2 tbsp olive oil. Add the thinly sliced beef. Cook until nicely browned.
To the beef, add the snow peas and cooked mushrooms, and then add the sauce. Stir and cook until everything is heated up.
Suggested Serving: Serve on cauliflower rice with a sprinkle of sliced green onions and toasted sesame seeds.
