2 servings (1/2 cup each)
Ingredients:
8 oz ground turkey breast
2 tbsp uncooked scallions, sliced
2 tbsp uncooked celery, diced
1 tbsp banana peppers, diced
1 tbsp soy sauce
1 tbsp rice vinegar
2 tsp garlic, minced
1 tsp ginger root, minced
1 tsp sesame oil
1/2 tsp oyster sauce
Directions:
Add the ground turkey to a lightly sprayed skillet. Cook on medium high heat, breaking up the meat, until no longer pink and cooked through.
Add the scallions to the skillet and cook for a few minutes.
Add the celery and peppers. Cook for another couple of minutes.
Make a sauce by combining the rest of the ingredients in a small bowl.
Add the sauce to the turkey mixture, mix and simmer on low heat until heated through.
Suggested Serving: Serve on lettuce leaves with chopped cabbage, cucumber, carrot, green onions, sliced almonds and sesame seeds. Drizzle with peanut butter.
