Asian Frittata (0 points)

4 servings (1/4 frittata)


Ingredients:

1 1/2 cups frozen stir fry vegetables, thawed

2 medium green onions, sliced

6 large eggs

1 1/2 tbsp soy sauce

1 tsp minced garlic

1 tsp minced ginger


Directions:

Preheat the oven to 350F.

Add the thawed veggies and green onions to a sprayed 9" pan or pie plate.

Whisk up the eggs, soy sauce, garlic and ginger. Pour over the veggies. Stir.

Bake for 30 minutes or until golden brown and cooked through.
