Ingredients:
1 apple, cored, peeled and chopped
1/2 tsp cornstarch
1 tsp ground cinnamon, divided
2 tsp no added sugar pancake syrup
1 cup quick oats
2 tbsp swerve brown sugar
1/2 tsp baking powder
1/8 tsp ground nutmeg
1/3 cup unsweetened almond milk
1 egg
2 tbsp unsweetened applesauce
1/4 tsp vanilla extract
Directions:
Preheat oven to 350F. Spray 4 cups of a regular muffin tin. Set aside.
Combine the chopped apple, cornstarch, 1/2 tsp ground cinnamon and syrup into a microwave safe bowl, stir well.
Microwave for at 1 minute and stir. Set aside to cool.
In another bowl combine the quick oats, brown sugar, baking powder, 1/2 tsp cinnamon and the nutmeg. Mix well.
Add the apples, almond milk, egg, applesauce and vanilla to the dry ingredient. Mix until combined.
Divide batter into 4 muffin cups. Bake for 30 minutes.
Suggested Serving: Serve hot or cold, with or without milk. Can be warmed up in the microwave.
