Baked Denver Omelet (4 points)

6 servings


Ingredients:

1/2 cup uncooked onion, chopped

1/2 cup uncooked bell pepper, chopped

6 slices rosemary ham, chopped

6 large eggs

4 tbsp 10% cream

3 oz shredded cheddar cheese


Directions:

Preheat the oven to 400F. Prepare a 9" baking dish by lightly spraying it with oil. Set aside.

In a medium lightly sprayed skillet, over medium high heat, add the onions and peppers. Cook until onions are translucent, about 5 minutes. Set aside.

In a medium bowl, whisk together the eggs, cream and half the cheese. Set aside.

Add the onion mixture to the prepared dish.

Pour the egg mixture into the prepared dish. Top with the rest of the cheese.

Bake for 25-30 minutes or until cooked through and golden brown.


Suggested Serving: Serve with additional veggies and fruit.
