4 servings (1 breast + 1/4 mushroom mixture)
Ingredients:
4 chicken breasts
8 oz mushrooms, sliced
2 tsp minced garlic
1 cup chicken broth
3 tbsp balsamic vinegar
1 tsp dried thyme
1 tbsp cornstarch
2 tbsp water
Directions:
Add the sliced chicken breasts to a large sprayed skillet over medium high heat. Sear on both sides, until golden brown, about 3 minutes. Remove and set aside.
Add the garlic and mushrooms to the skillet and cook 3-4 minutes until the mushrooms begin to soften.
Add the chicken broth, vinegar and thyme to the skillet. Scrape any browned bits off the bottom of the pan.
Add the chicken and let simmer for 10-15 minutes, or until the chicken is cooked through.
Make a slurry with the cornstarch and water. Add to the skillet, stir and heat up until thickened.
Suggested Serving: Serve with cauliflower rice.
