Banana Bread Bake (2 points)

2 servings (1/2 recipe)


Ingredients:

6 oz banana, ripe and mashed

2 large eggs

2 oz uncooked rolled oats

1 tsp vanilla extract

1/2 tsp ground cinnamon


Directions:

Preheat oven to 350F. Prepare 2 large ramekins or small springform pans by lightly spraying them with oil. Set aside.

Add all the ingredients to a medium bowl. Mix well.

Divide the batter evenly into the 2 prepared pans.

Bake for 30-35 minutes or until lightly browned and cooked through.


Suggested Serving: Serve with fruit, yogurt, peanut butter and/or nuts.

Thank you SO much for listing the banana by weight rather than amount (eg.1 large or 2 medium). I am never sure if I am using the right amount or if I had the right size.
