Banana Breakfast Cookies (1 point)

Ingredients:

1 banana, ripe and mashed

4 tbsp splenda

2 tbsp unsweetened applesauce

1 egg

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 cup old fashioned oats

1/2 cup quick oats

1/4 tsp table salt

4 tbsp pumpkin seeds

1/4 cup lily's chocolate chips

1/4 cup sugar reduced craisins


Directions:

Preheat oven to 350F. Spray a whoopie pie pan. Set aside.

In a large mixing bowl, whisk together banana, splenda, applesauce, egg, vanilla, cinnamon and salt.

Add in both kinds of oats, pumpkin seeds, chocolate chips and craisins. Stir to combine.

Drop by tablespoons ( about 2 each) into each well and flatten slightly with wet hands.

Bake 15-17 minutes. Let cool completely in pan.

Store in a covered container in the refrigerator.
