Banana Mini Biscuits (1 point)

Ingredients:

1 cup kodiak mix

1 tsp baking powder

1/2 tsp ground cinnamon

1 medium banana, ripe and mashed

3 tbsp plain fat free greek yogurt

1/2 tsp vanilla extract

1 egg white, beaten


Directions:

Preheat oven to 400F. Line a baking sheet with parchment or a non-stick silicon liner.

Mash the ripe banana, should be about 1/2 cup. Set aside.

Add the kodiak mix, baking powder, and cinnamon together. Mix well.

Add the mashed banana, yogurt and vanilla extract to the dry ingredients. Mix just until a soft dough is formed.

Tip out the dough onto a lightly kodiak floured surface. Knead lightly and briefly. Divide the dough into 8 equal portions.

Roll each portion into a ball and transfer to the lined baking sheet. Press down to flatten slightly.

Brush the tops with egg white. Bake for 12 minutes, rotating the bake sheet midway through baking.

Remove from oven. Increase the oven temperature to 450F. Return the baking sheet to the oven and bake for another 3-4 minutes until the tops are golden brown.
