Banana Pancake Bars (2 points)

6 servings (1/6th bake)


Ingredients:

1 cup spelt flour

1/2 cup quick oats

1 tbsp yupik date powder

1 tsp baking powder

1 tsp ground cinnamon

1/2 tsp table salt

1/4 tsp ground nutmeg

1 large banana, pureed

2 large eggs

1/4 cup 0% plain siggi's yogurt

1/4 cup plain unsweetened almond milk

1 tsp vanilla extract


Directions:

Preheat the oven to 350F. Prepare an 8" x 8" square pan by lightly spraying it with oil. Set aside.

In a large bowl, combine the flour, oats, date powder, baking powder, cinnamon, salt and nutmeg. Mix and set aside.

Blend the banana, eggs, yogurt, almond milk and vanilla. Add to the dry ingredients and mix until just combined.

Pour the batter into the prepared pan. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.


Suggested Serving: Serve with fruit sauce and or maple syrup.
