Banana Rice Pudding (3 points)

2 servings (1/2 mixture each)


Ingredients:

1 cup cooked jasmine rice

1 medium banana, ripe

1/4 cup plain 0% siggi's yogurt

8g creamy vanilla protein powder

1/2 tsp ground cinnamon

1/2 tsp vanilla extract

1 pinch table salt


Directions:

In a small bowl, mash the ripe banana well.

Add the rest of the ingredients and mix well.

Divide the mixture into 2 dishes and refrigerate.


Suggested Serving: Serve chilled with additional fruit, nuts and a dollop of light whipped cream.
