Ingredients:
1 cup flour
1 tsp baking powder
1 pinch table salt
1/2 cup plain fat free greek yogurt
1 egg
1 egg white
Directions:
Preheat oven to 350F. Prepare a baking sheet by putting down parchment paper. Set aside.
In a medium bowl combine the flour, baking powder and salt. Mix well. Set aside.
In another medium bowl combine the yogurt and egg. Mix well.
Add the wet ingredients to the dry ingredients and knead/mix until combined.
Turn onto a floured surface and divide into 10 equal pieces. Shape them into a small biscuit and place them onto the prepared baking sheet.
Beat up an egg white until slightly frothy and paint each square, tops and sides.
Bake for 18-20 minutes or until each biscuit is cooked through and golden brown.
Variation:
Corn and Green Onion - add 1/2 cup of corn kernals and 2 tbsp of sliced green onions.
Pumpkin Spice - replace 1/4 cup of the yogurt with 1/4 cup pumpkin puree and add 1 tsp pumpkin pie spice.
Apple - replace 1/4 cup of the yogurt with 1/4 cup unsweetened applesauce and add 1 tsp ground cinnamon.
