Blackberry Chutney (0 points)

16 servings (2 tbsp each)


Ingredients:

1 granny smith apple, peeled, cored and grated

1 lemon, juice only

1/4 cup splenda

1/2 cup onion, diced

1 tsp minced garlic

1/4 cup balsamic vinegar

2 cups fresh blackberries, or thawed from frozen

1 tsp minced ginger

1 tbsp lemon zest

1/4 tsp table salt


Directions:

Toss grated apple with lemon juice. Set aside.

In a medium sauce pan, over medium heat, combine the brown sugar, onion, balsamic vinegar, and garlic.

Bring to a boil, reduce heat and simmer for 5 minutes, stirring occasionally.

Add the apple mixed with the lemon juice and let simmer for 10 minutes, stirring occasionally.

Add the blackberries, ginger and lemon zest and let simmer an additional 10 to 15 minutes, stirring occasionally, until mixture has thickened.

Remove from heat and transfer to a covered container and store in the refrigerator.


Suggested Serving: Delicious served with hot or cold meats or cheese.
