Blackberry Lemon Oatmeal Muffins (2 points)

8 Servings (1 muffin each)


Ingredients:

2 cups uncooked rolled oats

1 scoop creamy vanilla protein powder

1 tsp baking powder

1/4 tsp table salt

1/8 tsp baking soda

1/2 cup unsweetened applesauce

1/2 cup unsweetened almond milk

2 eggs

1 tbsp lemon zest

1 tsp vanilla extract

1 cup blackberries, fresh or frozen

27g sliced almonds


Directions:

Preheat the oven to 350F. Prepare a 12 well muffin tin by lightly spraying 8 wells with oil or lining them with parchment paper muffin cups. Set aside.

Add the oats, protein powder, baking powder, salt and baking soda to a large bowl. Mix well. Set aside.

In a medium bowl, whisk together the milk, eggs, lemon zest and vanilla extract. Mix and let stand for 15 minutes, stirring occasionally.

Fold in the blackberries, divide the mixture, evenly, into 8 wells of the prepared pan.

Sprinkle the tops with sliced almonds and bake 25-30 minutes or until a toothpick inserted into the center comes out clean.
