Blender Oatmeal Bakes (2 points)

Ingredients:

1/2 cup rolled oats

1 tbsp yupik date powder

1 tsp baking powder

1/2 tsp cinnamon

1/2 tsp table salt

3/4 cup plain fat free greek yogurt

2 tbsp unsweetened almond milk

1 egg

1 tsp vanilla extract


Directions:

Preheat oven to 375F.

Spray 3, 1 cup oven safe ramekins. Set aside.

Add the oatmeal, date powder, baking powder, cinnamon and salt to a blender. Blend until the oats are broken down.

Add the yogurt, milk, egg and vanilla to the oat mixture and blend on high until combined.

Pour the batter, evenly, into the prepared ramekins and bake for 25-30 minutes or until a toothpick inserted in the centre comes out clean.

Remove from the oven and add desired toppings.


Suggested Serving: You can add 1/2 cup of any soft or chopped fruit to the recipe (berries, peaches, microwave gooey apples).


Variations:


Pumpkin - replace 1/4 cup of the plain fat free greek yogurt with pumpkin puree and replace the 1/2 tsp of ground cinnamon with 1/2 tsp of pumpkin pie spice.


Apple Pie - replace 1/4 cup of the plain fat free yogurt with unsweetened applesauce and replace the 1/2 tsp of ground cinnamon with 1 tsp of apple pie spice.


Cinnamon Swirl - after they have baked for 10 minutes, you can pipe a bit of cinnamon swirl on top in a circular pattern and continue baking.


Orange Cranberry - add 1/2 orange (juice and zest) as well as 1/2 cup chopped cranberries.
