Blueberry Cheesecake Baked Oats (3 points)

Ingredients:

40g uncooked rolled oats

1/2 tsp baking powder

1 pinch table salt

1/2 medium banana, ripe

1 large egg

2 tbsp fat free cottage cheese, heaping

1 tsp vanilla extract

60g blueberries, fresh or frozen


Directions:

Preheat the oven to 350F. Prepare a small baking dish by lightly spraying it with oil. Set aside.

Blend all the ingredients, except the blueberries, until they are broken down and smooth.

Add the blueberries, mix and pour into the prepared dish.

Bake 25-30 minutes or until golden brown and cooked through.


Suggested Serving: Top with additional blueberries.
