Ingredients:
1 cup spelt flour
1/2 cup date powder
1 1/2 tsp baking powder
1/2 tsp table salt
4 large eggs
2 egg yolks
1 1/4 cups fat free cottage cheese
1/2 cup unsweetened applesauce
1/4 cup plain fat free greek yogurt
1 tbsp lemon zest
1 tsp vanilla extract
1 1/2 cups fresh blueberries
Directions:
Preheat oven to 350F. Prepare a 9" spring form, round or 9" x 11" rectangular pan by lightly spraying with oil. Set aside.
In a medium bowl, add the spelt flour, date powder, baking powder and salt. Mix and set aside.
In a blender, add the eggs, egg yolks, cottage cheese, applesauce, yogurt, lemon zest and vanilla. Blend until cottage cheese curd is broken down.
Add the dry ingredients to the wet and mix until just combined.
Pour batter into prepared pan. Sprinkle the blueberries all over the top.
Bake for 40-50 minutes or until the edges are brown and the bake is set.
Cool before slicing.
Variation:
Apple - substitute microwave gooey apples (see recipe) instead of blueberries, omit the lemon zest and add 1 tsp ground cinnamon.
Cranberry Orange - substitute unsweetened cranberries instead of blueberries and orange zest instead of lemon zest.

I made the orange cranberry version today. I used orange extract instead of vanilla and whole frozen cranberries as I couldn’t find unsweetened dried ones. It is yummy!

That looks fabulous!! I just make the peach snack cake and it is wonderful! I doubled the recipe and baked in a 9 x 13 cake pan. Will freeze in individual servings. This one will be next on my list. 😃
