8 servings (1 muffin each)
Ingredients:
1 1/4 cups uncooked oat bran
3/4 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp table salt
1/2 cup unsweetened applesauce
1/4 cup unsweetened almond milk
1 egg or egg white
1 tbsp olive oil
1 tsp vanilla extract
1/3 cup blueberries, fresh or frozen
Directions:
Preheat oven to 350F. Prepare a muffin tin by lightly spraying or lining 8 wells of a muffin pan.
In a medium bowl, mix the oat bran, baking soda, cinnamon and salt. Set aside.
In another medium bowl, mix the applesauce, almond milk, egg white, olive oil and vanilla extract.
Add the wet ingredients to the dry and mix until just combined. Fold in the blueberries.
Divide the batter evenly amongst the 8 wells.
Bake for 20 -25 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Suggested Serving: Serve with cream cheese, eggs and additional fruit.
Variations:
Orange Cranberry - substitute 1/4 cup chopped frozen cranberries instead of blueberries and substitute 1/2 orange juice/zest for the almond milk. If the juuce does not add up to 1/4 cup then top up with unsweetened almond milk or water.
I made these! Very good! I might try to add a tsp of Monk sugar for a bit more sweetness. Also when I input the recipe to WW for safe keeping, it was 2 points per muffin.
I have quick oats, ground flax, bran flakes, do you think I could use a mix of those for this recipe instead of buying oat bran?
