Oatmeal Bakes (1 point)

2 servings (2 bakes each or a 2 cup dish/pan)


Ingredients:

2/3 cup uncooked oats

1/2 cup unsweetened applesauce

2 eggs

1/2 tsp baking powder

1/2 tsp ground cinnamon

1 pinch table salt

1 tbsp date powder


Directions:

Preheat oven to 375F. Prepare a regular muffin tin by lightly spraying 4 wells with oil or lining with parchment paper liners. You could also use a couple of 2 cup oven safe dishes/pans. Set aside.

In a medium bowl, add all the ingredients and mix until just combined.

Divide the batter, evenly, among the 4 wells/2 dishes or pans.

Bake for 20-25 minutes for the muffins and 30-35 minutes for the dishes/pans.


Variations:

Pineapple Coconut - substitute the applesauce with ripe mashed banana + 1/2 cup chopped drained pineapple tidbits and the vanilla extract with coconut extract. Add 3 3/4 tsp unsweetened coconut. This raises the points from 1 to 2.

Orange Cranberry - add the juice and zest from a small mandarin orange + 1/2 cup frozen cranberries.

Pumpkin Cranberry - substitute the applesauce with pumpkin puree + 1/2 cup frozen cranberries.

Pumpkin Pineapple - substitute the applesauce with pumpkin puree + 1/2 cup drained crushed pineapple.

Blueberry Banana - substitute the applesauce with 4 oz ripe banana, mashed + 1/2 cup blueberries.

Pumpkin Pineapple - substitute the applesauce with pumpkin puree + 1/2 cup drained crushed pineapple.

Chocolate Brownie - substitute the applesauce with 4 oz ripe banana, mashed + 2 tbsp unsweetened cocoa plus 1 tsp vanilla. This raises the points from 1 to 2.

Pumpkin Pecan - substitute the applesauce with pureed pumpkin, the ground cinnamon with pumpkin pie spice, the vanilla extract with caramel extract + 0.5 oz of chopped pecans. This will raises the points from 1 to 3.

Breakfast Sausage - substitute the ground cinnamon with garlic powder + 1 tbsp nutritional yeast + 1 sliced scallion + 2 oz sliced turkey breakfast sausage. This will increase the points from 1 to 2.

Chai Tea Apple - add 1/2 cup chopped apple and add 1 tsp of chai tea (from a tea bag).
