5-6 servings (1/2 cup) Ingredients: 1/2 pound ground turkey breast 1/2 tsp table salt, divided 1/2 tsp black pepper, divided 1/3 tsp dried sage 1/3 tsp dried thyme 1/8 tsp dried marjoram 1/8 tsp crushed red pepper 1/8 tsp paprika 4 large eggs 1/4 cup salsa Directions: Place the ground turkey in a mixing bowl and add 1/4 tsp of the salt, 1/4 tsp of the black pepper, the sage, the thyme, the marjoram, the crushed red pepper and the paprika. Mash and stir together until combined. Spray a large skillet lightly and heat up on medium high heat. Add the seasoned ground turkey, cook while breaking up into small chunks, until cooked through. Transfer to a bowl. Set aside. Combine the eggs and remaining salt and pepper. Use a whisk to beat the eggs. Spray a large skillet lightly and heat up on medium high heat. Add the beaten eggs and cook them, pushing them around to scramble, for a few minutes until cooked through. Transfer the eggs to the bowl with the cooked ground turkey. Add the salsa and stir to combine. Suggested Serving: Add to a low carb tortilla, and fold in the edges and roll it to make a wrap. Can be eaten as is or browned in a skillet or air fryer.
