Breakfast Muffins (2 points)

6 servings (1 each)


Ingredients:

1/2 cup spelt flour

1 tsp baking powder

1/4 tsp baking soda

1/4 tsp table salt

1/3 cup fat free cottage cheese

1/4 cup plain fat free greek yogurt

1/4 cup unsweetened almond milk

1 large egg

2 tbsp dried chives

1 7/8 tbsp real bacon bits

4 turkey breakfast sausages, casings removed, cooked, crumbled

30g light cheese, shredded


Instructions:

Preheat the oven to 350F. Spray, or line with parchment, 6 wells of a 12 well muffin tin. Set aside.

Add the dry ingredients into a bowl and mix to combine. Set aside.

Add the cottage cheese, yogurt, milk and egg into a blender and blend until smooth.

Add the wet ingredients to the dry ingredients and mix until just combined.

Fold in the chives, bacon bits, cooked crumbled sausage and cheese.

Divide the batter, evenly, into the 6 muffin holes of the prepared pan.

Bake for 30 minutes of until golden brown and cooked through.

Hi! Yes, like I noted on my post... you can substitute with regular flour or pancake mix but you may have to adjust your points  😊
