2 servings (1 pizza each)
Ingredients:
8 oz little red potatoes, shredded
3 large eggs, divided
1 tsp garlic powder
1 tsp dried parsley
1/2 tsp onion powder
1/2 tsp table salt
1/4 tsp black pepper
2 tbsp bell peppers, diced
2 tbsp scallions, sliced
1 slice rosemary ham, diced
1 7/8 tbsp real bacon bits
1 oz aged shredded cheddar
Directions:
Preheat oven to 400F. Prepare a baking sheet by lightly spraying it. Set aside.
Shred the potatoes and wring them out in a tea towel to remove most of the moisture. Add to a medium bowl.
To the potatoes, add an egg and spices, mix well.
On the lightly sprayed baking sheet, shape and flatten half the potatoes into a 6" circle. Do the same for the other half. Lightly spray the top.
Bake for 20-25 minutes or until potatoes are golden and cooked through. Set aside. Leave oven on.
To a lightly sprayed skillet, on medium high heat, add the bell peppers and sliced scallions. Cook for a few minutes and then add the diced ham. Cook for another couple of minutes.
Meanwhile, whisk the other two eggs together and add to the pan. Scramble and cook until eggs are set.
Add half the scrambled egg mixture to one of the potato crusts and half to the other. Divide the bacon bits and shredded cheese in half and sprinkle on both pizzas.
Bake for 10 minutes or until cheese is melted.
Suggested Serving: You can top with your own favourite toppings.
