Broccoli Salad (3 points)

4 servings (heaping 1/2 cup)


Ingredients:

2 cups broccoli florets, steamed crisp, chopped

1 cup red grapes, quartered

1 1/2 slices bacon, cooked and chopped

30g light shredded tex mex cheese

2 tbsp red onion, minced

2 tbsp sunflowers seeds, toasted

1/4 cup 0% plain siggi's yogurt

2 tbsp 1/2 fat mayonnaise

2 tsp yupik date powder

2 tsp apple cider vinegar


Directions:

In a medium bowl, combine the broccoli, grapes, bacon, cheese, onion and sunflower seeds. Set aside.

In a small bowl, combine the yogurt, mayonnaise, date powder and vinegar. Whisk until combined.

Add the dressing to the broccoli mixture. Refrigerate an hour before serving.


Suggested Serving: Great as a side salad.


Variations:

Blueberry Chickpea - add 1 cup chickpeas, substitute the grapes with blueberries, the sunflower seeds with sliced almonds and the light shredded cheese with light feta.

Delicious! One of my favourite side dishes. Where do you buy date powder? Is it like sugar?

I ordered the date powder from amazon (yupik organic) because I am staying away from artificial and non-sugar sweeteners but you could substitute with your own favourite sweetener to your own taste 😊
