Caprese Frittata (2 points)

6 servings


Ingredients:

6 large eggs

1/4 cup unsweetened almond milk

1 tsp italian seasoning

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp table salt

1/4 tsp black pepper

1/2 cup grape tomatoes

3 oz small mozzarella balls

44g gia pesto


Directions:

Preheat the oven to 350F. Prepare a 9" dish by lightly spraying with oil. Set aside.

Gently whisk together the eggs, milk and spices until smooth.

Pour into the prepared dish.

Distribute the mozzarella balls and tomatoes throughout the mixture.

Dot the pesto evenly over the top.

Bake until the center is set, 30-35 minutes. Let cool for about 10 minutes before serving.


Suggested Serve: Serve with a balsamic glaze.
