Cashew Chicken Meatballs (3 points)

4 servings (6-7 meatballs + 1/4th sauce and cashews each)


Ingredients:

1 egg

4 tsp garlic, minced, divided

1 tsp onion powder

1/2 tsp table salt

1/4 tsp black pepper

1 pound ground chicken breast

1/4 cup soy sauce

1/4 cup fat free chicken broth

2 tbsp rice vinegar

5 tsp date powder

1 tbsp minced ginger

1 tbsp corn starch

1 tsp sriracha hot sauce

1 tsp sesame oil

39 gm chopped dry roasted unsalted cashews


Directions:

Preheat oven to 350F. Line a baking sheet with foil. Set aside.

In a large bowl, beat the egg, stir in 2 tsp minced garlic, onion powder, salt and pepper. Add in chicken and mix to combine.

With damp hands, form chicken mixture into 1" balls (~24-28 balls) and transfer to the prepared baking sheet. Bake for 30 minutes.

While the meatballs are cooking make the sauce in a large saucepan.

Add the soy sauce, chicken broth, vinegar, date powder, ginger, 2 tsp minced garlic, cornstarch, sriracha and sesame oil. Whisk to combine.

Heat on medium high heat until mixture thickens.

Add in the cooked meatballs and cashews.


Suggested Serving: Serve over stir fried or steamed vegetables and cauliflower rice.
