6 servings (4-5 meatballs + 1/6th sauce and cashews each)
Ingredients:
1 egg
1/4 cup dried breadcrumbs
4 tsp garlic, minced, divided
1 tsp onion powder
1/2 tsp table salt
1/4 tsp black pepper
1 pound ground chicken breast
1/4 cup soy sauce
1/4 cup fat free chicken broth
2 tbsp rice vinegar
2 tbsp splenda
1 tbsp minced ginger
1 tbsp corn starch
1 tsp sriracha hot sauce
1 tsp sesame oil
42 gm chopped dry roasted unsalted cashews
Directions:
Preheat oven to 350F. Line a baking sheet with foil. Set aside.
In a large bowl, beat egg and add bread crumbs. Stir in 2 tsp minced garlic, onion powder, salt and pepper. Add in chicken and mix to combine.
With damp hands, form chicken mixture into 1" balls (~26-30 balls) and transfer to the prepared baking sheet. Bake for 30 minutes.
While the meatballs are cooking make the sauce in a large saucepan.
Add the soy sauce, chicken broth, vinegar, splenda, ginger, 2 tsp minced garlic, cornstarch, sriracha and sesame oil. Whisk to combine.
Heat on medium high heat until mixture thickens.
Add in the cooked meatballs and cashews.
Suggested Serving: Serve over stir fried or steamed vegetables and cauliflower rice.
