Cauliflower Mash (0 points)

4 servings (1/2 cup each)


Ingredients:

1 head cauliflower, florets

2 tsp garlic, minced

1 tsp table salt

1/4 cup plain 0% siggi's yogurt


Directions:

Put cauliflower florets, garlic and salt into a large pot, cover with water and put on high heat.

Bring to a boil and simmer for 10-12 minutes, until cauliflower is fork tender. Drain the water from the pot.

Using an immersion blender, blend until smooth.

Add yogurt and mix until combined.


Chicken Cauliflower Mash - cook cauliflower and garlic in fat free chicken broth instead of water.


Parmesan Cauliflower Mash - add 1/4 cup of grated light parmesan cheese. The points go up to 1 point per serving.


Japanese Sweet Potato Mash - substitute 1/2 cauliflower with 8 oz cubed japanese sweet potato. The points go up to 1 point per serving.
