Cauliflower Rice Pudding (1 point)

4 servings (1/2 cup each)


Ingredients:

1 1/2 cup cauliflower, riced

3 tbsp raisins

3 tbsp no added sugar pancake syrup

1 cup plain fat free greek yogurt

1/2 tsp ground cinnamon

1/2 tsp salt

1/2 tsp vanilla extract


Directions:

In a large pot, add the riced cauliflower and enough water to cover and cook until the cauliflower is soft.

While the cauliflower is cooking, soak the raisins in hot water to allow them to plump. Set aside.

Once the cauliflower is cooked, drain water and dump into a medium bowl.

Add the rest of the ingredients and stir well.

Divide into 4 ramekins and refrigerate.


Suggested Serving: Serve chilled with a dollop of light cool whip.


Variation:

Banana - substitute 1/3 cup of the 1 cup plain fat free greek yogurt with a pureed banana.

Craisin - substitute the raisins with 1/4 cup of sugar reduced craisins.
