Chickpea and Edamame Hummus (0 points)

8 servings (1/4 cup each)


Ingredients:

2 cups frozen shelled edamame, thawed

2/3 cup chickpeas, drained and rinsed

1 lemon,  juice only + enough water to get 1/3 cup

1 tbsp minced garlic

1 tbsp basil paste

1/2 tsp table salt

1/4 tsp black pepper


Directions:

Blend all the ingredients until everything is broken down and smooth.

Add more water (a tbsp at a time) if needed until you achieve the desired consistency.

Store in a covered container in the refridgerator.


Suggested Serving: Serve with toasted bread, pitas, crackers or vegetables.
