Chickpea Energy Balls (2 points)

12 servings (1 each)


Ingredients:

14 oz can chickpeas, drained and rinsed

136g deglet noor dates

4 tbsp pb peanut powder

2 tbsp unsweetened cocoa powder

4 tbsp water

1 tsp vanilla extract

62g mini chocolate chips


Directions:

Put all the ingredients except the chocolate chips into a blender or food processor.

Blend until well mixed and smooth.

Fold in the chocolate chips.

Divide the mixture evenly, about 2 tablespoons, and roll into a ball.
