Chickpea Patties (1 point)

4 servings (1 pattie each)


Ingredients:

15 oz can chickpeas, drained and rinsed

1/2 cup bread crumbs

1 large egg

1/4 cup onion, diced

1/4 cup roasted red pepper, diced

1 tsp ground cumin

1 tsp ground tumeric

1 tsp garlic powder

1 tsp onion powder

1/2 tsp table salt


Directions:

Mash the chickpeas with a fork, or blend in a food processor until the chickpeas are broken down.

Combine the chickpeas, breadcrumbs, egg, onion, red pepper and spices. Mix well, divide and form into 4 even patties.

Heat a lightly sprayed large skillet over medium high heat.

Cook the patties 5 minutes per side, until golden brown.
