Ingredients:
8 oz lean ground beef
1/2 cup onion, chopped
1 tsp minced garlic
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp onion powder
1/4 tsp table salt
1/4 tsp black pepper
15 oz canned tomato sauce
2 oz light cream cheese
24 oz cooked cauliflower
4 oz light shredded tex mex cheese
Directions:
Preheat oven to 350F. Prepare an 8"x 8" baking pan by lightly spraying a pan with oil. Set aside.
Lightly spray a large skillet and heat up on medium high heat. Add the ground beef, onion, garlic and seasonings.
Cook, stir, and crumble until beef is fully cooked and onion has softened, about 5-7 minutes.
Remove from skillet and add the tomato sauce and cream cheese. Stir until thoroughly mixed and melted. Fold in the cooked cauliflower.
Pour mixture into the prepared pan. Top with shredded cheese. Cover with foil and bake for 20 minutes.
Remove foil and continue baking until lightly browned, about 10 minutes.
