Ingredients:
2 bananas, ripe
1/2 cup unsweetened applesauce
1/2 cup plain fat free greek yogurt
1 tsp vanilla extract
2 eggs
1 cup kodiak mix
6 tbsp splenda
6 tbsp unsweetened cocoa powder
1 tsp baking powder
1 tsp baking soda
Directions:
Preheat oven to 350F.
Mix the bananas with a mixer until they are mashed.
Add the applesauce, yogurt, vanilla and eggs. Mix together. Set aside.
In a separate bowl, mix together the kodiak mix, splenda, cocoa powder, baking powder and baking soda.
Add the dry ingredients to the wet ingredients and mix until incorporated. Pour batter into the sprayed 6 cup bundt pan and smooth the top.
Bake for 50 minutes or until the toothpick poked in the center comes out clean.
Cake should cool completely before eating.
I’ve made this recipe several times, sometimes I make in parchment muffin cups. Always turns out, so delicious.
Made this cake today, I used Monk fruit sweetener instead of the swerve. Cake was delicious. My 5-year-old granddaughter loved it. Looking forward to trying more of your recipes.
I made this today using the peanut butter kodiak mix. Yummy!
