2 servings (1/2 mixture each)
Ingredients:
4 oz banana, ripe
2 oz uncooked oats
1 large egg
1 tsp ground cinnamon
1 pinch table salt
2 tbsp unsweetened cocoa
1 oz 0% greek yogurt
Directions:
Place the banana, oats, egg, cinnamon, salt, cocoa and yogurt in a medium bowl and use a fork to mash it all together until well combined.
Heat a large nonstick skillet over medium heat and transfer the oat mixture to the skillet. Spread it out to an even layer and allow to cook undisturbed until it looks set, about 5 minutes.
Use a spatula to scramble the mixture and cook on the other side until brown and toasted, about 3-5 more minutes.
Transfer to a serving bowl along with yogurt and berries.
Variations:
Plain - leave out the cocoa.
Made the chocolate scrambled oats last week and topped with vanilla yogurt and some nuts, boy oh boy this was amazing and filling for a good hearty breakfast
