Chunky Monkey Oatmeal Bakes (2 points)

10 servings (1 each)


Ingredients:

2 cups uncooked rolled oats

6 tbsp powdered peanut butter

1 tsp ground cinnamon

1 tsp baking powder

1/2 tsp table salt

2 medium bananas, ripe and mashed

2 large eggs

1/4 cup almond milk

1 tsp vanilla extract

2 oz lily's chocolate chips


Directions:

Preheat the oven to 350F. Spray, or line with parchment paper, 10 wells of a 12 well muffin pan. Set aside.

In a medium bowl, combine the oats, peanut powder, cinnamon, baking powder and salt. Mix well and set aside.

In another bowl, combine the mashed banana, eggs, milk and vanilla. Mix well.

Add the wet ingredients to the dry and mix until just combined. Fold in the chocolate chips. Let the mixture sit for 10 minutes.

Divide the batter, evenly, into the 10 wells. Bake for 25-30 minutes or until an inserted toothpick comes out clean.

Remove from the oven and let cool.
