Ingredients:
2 cups uncooked rolled oats
6 tbsp powdered peanut butter
5 tsp date powder
1 tsp ground cinnamon
1 tsp baking powder
1/2 tsp table salt
2 large eggs
2 medium bananas, ripe and mashed
1/2 cup almond milk
1 tsp vanilla extract
40g date chocolate chips
Directions:
Preheat the oven to 350F. Spray, or line with parchment paper, 6 wells of a 12 well muffin pan. Set aside.
In a medium bowl, combine the oats, peanut powder, date powder, cinnamon, baking powder and salt. Mix well and set aside.
In another bowl, combine the mashed banana, eggs, milk and vanilla. Mix well.
Add the wet ingredients to the dry and mix until just combined. Fold in the chocolate chips.
Divide the batter, evenly, into the 6 prepared wells. Bake for 20-25 minutes or until an inserted toothpick comes out clean.
Remove from the oven and let cool.
