Ingredients:
1 cup quick oats
1 tbsp date powder
1 tsp ground cinnamon
1/2 tsp baking powder
1/2 cup fat free cottage cheese
1/2 cup unsweetened applesauce
1 egg
Directions:
Preheat the oven to 350F. Prepare a 12 hole muffin tin by lightly spraying or lining 4 holes with parchment paper cups. Set aside.
To a medium bowl, add the oats, date powder, cinnamon and baking powder. Mix together and set aside.
To a blender, add the cottage cheese, applesauce and egg. Blend until the cottage cheese is broken down.
Add the wet ingredients to the dry and mix until just combined.
Divide the batter, evenly, into the prepared pan. Bake for 20-25 minutes or until golden brown and cooked through.
