2 servings (1 fillet + 1/2 bruschetta)
Ingredients:
1/2 cup cherry tomatoes, diced
1 oz kalamata olives, diced
1 oz black olives, diced
1 tbsp capers, drained
1 tsp minced garlic
2 tsp olive oil
2 fillets ling cod
Directions:
Preheat oven to 400F. Prepare a baking sheet by lightly spraying it with oil. Set aside.
In a bowl combine the tomatoes, olives, capers, garlic, olive oil and a pinch of salt together. Let stand at room temperature while you prepare and cook the cod.
Lightly spray the fillets with oil, season with salt and pepper and lay on the baking sheet.
Bake for 8-10 minutes. Remove from oven and spoon bruschetta over the top. Return to oven and continue baking for another 5-10 minutes or until cod is cooked through.
Suggested Serving: Serve with salad.
