Cottage Cheese Biscuits (2 points)

Ingredients:

1 cup kodiak pancake mix

1 tsp baking powder

1/2 tsp table salt

1/2 cup fat free cottage cheese

1 egg

2 tbsp unsweetened almond milk


Directions:

Preheat the oven to 425F. Prepare a baking sheet by lightly spraying it with oil or lining it with parchment paper. Set aside.

In a medium bowl, add the kodiak mix, baking powder and salt. Set aside.

Blend up the cottage cheese, egg and milk.

Add the wet ingredients to the dry and mix until dough comes together.

Turn the dough out onto a lightly floured counter and knead a few times.

Divide the dough into 5 equal amounts, roll into a ball and place onto the prepared pan. Press down to about 3/4" thickness.

Bake for 10-15 minutes or until cooked through and golden brown.
