Ingredients:
7 large eggs
1/2 cup fat free cottage cheese
1 tsp italian seasoning
6 slices shaved ham, chopped
1 cup cooked asparagus, chopped
1 3/4 tbsp light parmesan cheese
Directions:
Preheat oven to 350F. Prepare a 10" oven safe pie dish by lightly spraying it with oil. Set aside.
Add eggs, cottage cheese and Italian seasoning to a blender. Process until cottage cheese breaks down. Set aside.
Scatter the chopped ham and asparagus in the prepared pie dish.
Pour the blended egg and cottage cheese mixture over the ham and asparagus. Sprinkle the top with the light parmesan cheese.
Bake in the oven until set, about 30 minutes.
Variations:
Zucchini and Corn - leave out the cooked asparagus and ham, add 3/4 cup zucchini rounds + 3/4 cup corn niblets + 1/4 cup scallions that you have partially cooked in a frying pan. Increase the light grated parmesan to 3 tbsp.
You could use 1 cup of any cooked vegetable or a mixture of vegetables equal to 1 cup.
