Cottage Cheese Stuffed Mushrooms (2 points)

2 servings (4 each)


Ingredients:

8 medium mushrooms, wiped clean, gills and stems removed (save the stems)

2 tbsp onion, diced

1 tsp garlic, minced

1 tbsp sun dried tomatoes, finely chopped

2 cups spinach leaves, chopped

1/4 cup 0% cottage cheese, drained

3 tbsp light feta, crumbled

1 tsp greek seasoning


Directions:

Heat the oven to 350F. Prepare a baking sheet by lightly spraying with oil. Set aside.

Dice the reserved stems. In a lightly sprayed skillet, over medium heat, add the diced stems, onion, garlic and sun dried tomato.

Cook for about 5 minutes, stirring occasionally.

Add the spinach and stir until it wilts.

Remove from the heat and stir in the cottage, feta cheese and seasoning.

Fill the mushrooms, evenly, with the mixture and place onto the prepared baking sheet.

Bake for 10-12 minutes or until the mushrooms are hot.
