Cranberry Carrot Cake Oatmeal (1 point)

3 servings (1/3 mixture each)


Ingredients:

1 1/2 cups water

1/2 cup unsweetened almond milk

1 cup old fashioned rolled oats

1/2 cup grated carrot

1/2 cup crushed pineapple in juice, drained

1/2 cup unsweetened applesauce

1/3 cup reduced sugar craisins

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp table salt

1/4 tsp ground ginger

1/8 tsp ground allspice


Directions:

Bring the water/milk to a boil, add the oats and reduce the heat to medium.

Add the carrot, pineapple, applesauce, craisins, vanilla and spices.

Continue cooking, stirring occasionally, until most of the liquid is absorbed and the oatmeal is the consistency you like.


Suggested Serving: Serve with additional milk and fruit.
