Cranberry Cornbread (1 personal point)

Ingredients:

1/2 cup whole grain cornmeal

1 tbsp splenda

1/2 cup kodiak mix

1 tsp baking powder

1 tsp baking soda

1/3 cup unsweetened applesauce

2 eggs

1/2 cup plain fat free greek yogurt

1/2 cup almond milk

2/3 cup cranberries, halved

1/2 frozen corn, thawed


Directions:

Preheat oven to 350F.

In a large bowl, whisk the cornmeal, splenda, kodiak mix, baking powder and baking soda together. Set aside.

To a medium bowl, add the applesauce, eggs, yogurt and milk. Mix until combined.

Fold in the cranberries and corn.

Pour batter into a sprayed 8" x 8" baking pan.

Bake for 35-40 or until a toothpick inserted into the middle comes back clean.


Suggested Serving: Awesome served with chili.
