Ingredients:
3 cups mixed berries, fresh or frozen
1 large apple, cored and shredded
5 tbsp splenda
1 tbsp fresh lemon juice
10 tbsp cream of wheat cereal
5 tbsp kodiak mix
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
2 eggs
1 cup plain fat free greek yogurt
1/4 cup unsweetened applesauce
2 tbsp unsweetened almond milk
Directions:
Preheat oven to 350F.
Add 3 cups of mixed berries, grated apple, splenda and lemon juice to a large pot over high heat.
Once the mixture comes to a boil, lower the heat to medium and allow mixture to simmer for 1/2 hour. Some of the berries should burst and thicken so make sure to stir as you go. Set aside to cool down.
In a medium bowl combine the cream of wheat, kodiak mix, baking powder, salt and baking soda. Set aside.
In another medium bowl combine the egg, yogurt, applesauce and almond milk.
Add the dry ingredients to the wet and mix until moistened. Set aside.
Pour the berry mixture into a deep 9" round pan or casserole dish. Drop large spoonful's of the batter on top of the berry mixture.
Bake for 30 minutes.
Suggested Serving: Serve hot or cold, with or without milk. Can be warmed up in the microwave.
