Crustless Pumpkin Pie (2 points)

8 servings (1/8 pie each)


Ingredients:

2 eggs

1 cup unsweetened vanilla almond milk

2 tsp pumpkin pie spice

1 tsp vanilla extract

3/4 tsp ground ginger

1/4 table salt

15 oz pumpkin puree

1/2 cup date powder


Directions:

Preheat the oven to 375F. Prepare a 9" pie plate by lightly spraying with oil. Set aside.

In a large bowl, whisk the eggs until well blended. Whisk in the almond milk, date powder, pumpkin pie spice, vanilla, ginger, salt and pumpkin.

Pour into the prepared pan. Bake until a thin knife inserted in the center comes out clean, 45-50 minutes. Let cool to room temperature.


Suggested Serving: Serve with light whipped cream.
