Crust Less Pumpkin Pie

Ingredients:
2 eggs + 1 yolk
15 oz pumpkin puree
3/4 cup unsweetened vanilla almond milk
2 tsp vanilla extract
1/2 cup date powder
2 tbsp corn starch
2 tsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp table salt
Directions:
Preheat the oven to 350F. Prepare a 9" pie plate by lightly spraying with oil. Set aside.
In a large bowl, whisk the eggs/yolk until well blended. Whisk in the pumpkin, milk, vanilla, date powder, cornstarch, cinnamon, pumpkin pie spice and salt.
Pour into the prepared pan. Bake until a thin knife inserted in the center comes out clean, 50-60 minutes. Let cool to room temperature.
Suggested Serving: Serve with light whipped cream.





This is amazing. I’m going to make this because I cannot get enough pumpkin this time of year!
