Crustless Pumpkin Pie (2 points)

8 servings (1/8 pie each)


Ingredients:

2 eggs + 1 yolk

15 oz pumpkin puree

1 cup unsweetened vanilla almond milk

2 tsp vanilla extract

1/2 cup date powder

1 tbsp flour

2 tsp cinnamon

1 tsp pumpkin pie spice

1/2 tsp table salt


Directions:

Preheat the oven to 300F. Prepare a 9" pie plate by lightly spraying with oil. Set aside.

In a large bowl, whisk the eggs/yolk until well blended. Whisk in the pumpkin, milk, vanilla, date powder, flour, cinnamon, pumpkin pie spice and salt.

Pour into the prepared pan. Bake until a thin knife inserted in the center comes out clean, 60-70 minutes. Let cool to room temperature.


Suggested Serving: Serve with light whipped cream.
