Lemon Loaf (2 points)

Ingredients:

1 cup spelt flour

1/3 cup date powder

2 tsp baking powder

1/2 tsp salt

2 eggs

1/2 cup unsweetened applesauce

1/3 cup plain fat free greek yogurt

2 tbsp unsweetened almond milk

1 medium lemon, juice and zest


Directions:

Preheat oven to 350F.

In a medium bowl, whisk together the flour, date powder, baking powder and salt. Set aside.

In a large bowl, mix together the eggs, applesauce, yogurt, almond milk, lemon juice and lemon zest.

Stir the dry ingredients into the wet ingredients and mix only until combined.

Pour into a sprayed 8"x 4" loaf pan or 2, 5 1/2"x 2 1/2" loaf pans and smooth the top.

Bake for 50-55 minutes for large loaf and 30 minutes for the 2 smaller loaves or until an inserted toothpick to the center comes out clean.


Variations:

Cranberry/Blueberry - substitute the tea with 1 to 1 1/2 cups of fresh or frozen berries, folded in at the end before pouring into the pan.


Earl Grey - add the contents of 2 earl grey tea bags.


Poppy Seed - add 2 tbsp of poppy seeds. The points will go up to 3 points per slice.

Sorry I just saw this comment. I hope you figured it out that you do not brew the tea first, just add the contents of the tea bags to your dry ingredients.
