2 servings (1/2 mixture each)
Ingredients:
1 cup blueberries
1/2 tsp cornstarch
1/2 tsp lemon juice
1/2 tsp ground cinnamon
1/3 cup quick oats
2 tsp date powder
1 tsp olive oil
2 tbsp water
Directions:
Add the blueberries, cornstarch and lemon juice to a microwave safe bowl and micowave for 2 minutes. Stir and add to a 2 cup microwaveable ramekin. Set aside.
In a small bowl, mix the oats, date powder, cinnamon, olive oil and water together until you get a crumbly mixture.
Add the crumbly mixture on top of the blueberries. Microwave for 1 minute. Serve.
Suggested Serving: Serve with yogurt.
