8 servings
Ingredients:
3 tbsp everything bagel seasoning, divided
2 tsp table salt, divided
1 cup green onions, sliced
17 tbsp kodiak mix
1 tbsp splenda
2 tsp baking powder
1/4 tsp baking soda
2 large eggs
1/2 cup unsweetened applesauce
1/3 cup plain fat free greek yogurt
2 tbsp unsweetened almond milk
Directions:
Preheat oven to 350F and prepare an 8" x 4" loaf pan by lightly spraying it with oil. Set aside.
Combine 2 tbsp of everything bagel seasoning with 1 tsp table salt (only add this if your everything bagel spice has no salt added) and a cup of sliced green onions. Set aside.
In a medium bowl, combine the kodiak mix, splenda, 1/2 tsp table salt, baking powder and baking soda. Mix to combine. Set aside.
In another medium bowl, whisk together the eggs, applesauce, yogurt and almond milk.
Add the wet ingredients to the dry and mix with a spatula until thoroughly mixed.
Spoon about half the batter into the prepared loaf pan. Sprinkle the green onion mixture, evenly, over the batter. Add the rest of the batter, smoothing it to the corners. Set aside.
Mix the remaining tbsp of the everything bagel seasoning with 1/2 tsp table salt (only add this if your everything bagel spice has no salt added) and sprinkle on top of the loaf.
Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Suggested Serving: Great with chili, stew, soup or eggs.
I just made this and its delicious. I mixed the seasoning and green onions in the batter too.
Thanks for the great recipe!
I made this today. I mixed the bagel seasoning and green onions into the batter instead of putting a layer in the middle. Also sliced the loaf into 10 slices so they would be 1 point each for me. Delish! Can’t wait to try it toasted…
